Adela Balderas from Deusto Business School and the Basque Culinary Center speaks on gastronomy and how eating habits affect society. Focusing on the Basque region in Northern Spain, she describes how gastronomy is more than food. It is a symbol of cultural identity, a supporter of social cohesion, a revitalizer of neighborhoods and much more.

Adela Balderas is a research fellow at the University of Oxford, a professor at Deusto Business School, University of Deusto (Spain) and a professor and the Masters Director at the Basque Culinary Center, University of Mondragon, Spain. She is also a consultant for the hospitality industry in marketing, business and communication skills, with a wealth of teaching experience at the undergraduate and graduate levels. She is a guest lecturer at several international universities and an invited speaker at several national and international companies. Adela researches senior tourism and leadership and communication skills.
